Barbecues are a style of service to eat at ease in Brazilian restaurants. In most other parts of the world outside Brazil, they are commonly known as carvery restaurants. You pay a fixed price and the waiters bring you the food until you have had enough. At steakhouse casters, waiters come to the table with knives and skewers, which are spiked with various types of quality cuts of meat, most commonly local cuts of pork, chicken and sometimes exotic meats. Although not as popular, there are other carvery-style restaurants in Brazil serving different foods, including pasta, pizza and sushi.
Caster main dishes are served off the skewer, and cut or mounted directly on the table. Sometimes they are accompanied with chips, bananas, kale, black beans and rice (served buffet style).
In many restaurants, the customer receives a colorful card, red on one side and green on the other. This way, the waiters will only bring more meat if the card is green in color. In this type of restaurant, waiters carry skewers of cooked meat around the restaurant and customers signal the waiter with a green card facing up if they are interested in a particular cut. The meat is then sliced directly from the skewer. Once again the customer is invited to eat as much as they like and put the red card up when they are satisfied.
Often these restaurants also have side dishes with salads, collard greens, black beans and rice, chips and more. Or, the waiter can bring a small selection of side dishes straight to the table.
