Lo Abarca - Artisan baking and brewing experience
Embrace this sustainable farm in the middle of nowhere near Lo Abarca. Where 2 cousins Cristian and Alek have worked to keep this farm alive. This used to be a community with more than 70 people. That used to live with the bakery and the healthy products. Now only them are fighting for preserving it.
Alek is an expert in bread so he will teach us his passion for artisan bakery. We will learn the whole process of sourdough from the flour mixing, the dough kneading and finally the baking process. We prepare our bread with organics ingredients. Learning to make this special bread, without fat and chemicals.
In the second part of this tour Cristian will show us how to brew artisan beer. We will learn the most important steps in the production like the grinding, yeast maceration and maturation process.
Finally, we will enjoy lunch with our own production of bread in the middle of nature surrounded by a forest of elms.
Itinerary
This is a typical itinerary for this product
Stop At: Iglesia Lo Abarca, Cartagena, Valparaíso, Chile
Our Stop will be at the sustainable farm. Our first activity will be with Alek who is in charge in the kitchen. With him, we will learn the process of making artisan sourdough bread, mixing the different types of flours, give the shapes to the masses and baking them. We will make three types of bread, whole, white with olives and garlic white oregano. After about 40 minutes of kneading, we will give the shape to the bread get ready for cooking. This process is slow because the farm uses the wood collected on the farm. This wood is one of the secret ingredients for the unique taste.
While the bread is cooking we will proceed to learn the beer artisanal process. With our host Cristian. We will learn the principal steps for this process :
The hygiene of the equipment
Grinding of barley
The maceration
Water temperatures
The hops (flowers from the beer)
Yeast and its function
Maturation
The formula to take out the volume Alcoholic
Also, he will explain the difference between natural carbonation and forced carbonation with co2.
After 2 hours of class, we will be ready to taste the beer right from the barrel. Now that we start to smell the amazing aroma that came from the oven we will be ready to have a tasty lunch, with the bread prepare it for us, surrounding for beautiful elms.
After this amazing day we will be ready to return to Santiago around 3:30 pm. and arriving 2 hours lates at 5:30 aprox.
