Day 2: TORGIANO OLIVE OIL AND WINE MUSEUMS with BRUNCH, AND TODI GUIDED TOUR

Stop At: Cantine Giorgio Lungarotti, Viale Giorgio Lungarotti 2, 06089 Torgiano Italy
Nice fluvial village of Roman origins, today Torgiano owes its fame to the excellent agricultural productions that have made it one of the most appreciated capitals of olive oil and wine in Italy. We’ll firstly take a visit to the olive oil museum, where this precious product is illustrated through museum objects retracing its history and analyzing its countless virtues. Only a few steps away from this fascinating museum, and we are faced with 5000 years of history narrated through archaeological finds and artifacts that document the role of wine in Mediterranean civilization. And if it is true that knowing is at the basis of taste, at the end of the museum tour, we’ll enjoy a rich wine tasting and brunch in a prestigious winery, in which Torgiano wines and olive oils will be the undisputed protagonists.

Stop At: Centro Storico di Todi, Todi Italy
In the early afternoon we’ll reach Todi, "The most livable city in the world" or "The ideal city", to admire its treasures: Cisterne Romane, Church of San Fortunato which preserves in the crypt the tomb of Jacopone Da Todi, Tempio Della Consolazione by Bramante, Cathedral of the twelfth century built on the ruins of the ancient temple to the god Apollo, ceramists’ workshops, and more. Time for shopping.

Day 3: TREVI GUIDED TOUR and TRUFFLE HUNTING, AND MONTEFALCO GUIDED TOUR with WINE TASTING

Stop At: Borgo di Trevi, 06039, Trevi Italy
This morning we’ll take a stroll through the alleys of Trevi, listed among the most beautiful villages in Italy. Built in Roman times, Trevi still preserves Roman remains such as the mighty walls of the first century BC, and medieval remains such as Porta del Bruscito, Porta del Cieco, Porta San Fabiano and the Arch of Mostaccio which give the village a particularly charming atmosphere. Trevi is also appreciated in Umbria for its olive oil and black truffle. Truffle hunting in Umbria is an old age tradition. Umbria produces the highest number of black truffles in Italy, whose quality is famous throughout the world. Truffles are an integral part of Umbrian cuisine and culture. That of the truffle hunter, is a hard work made of deep love for the land, intelligent observation, waiting and great satisfaction. We will take advantage of his wise guide, assisted by an incomparable four-legged scout, to learn the secrets of this noble tuber, through a naturalistic path of great beauty. And for those who still have some questions at the end of the hunt? Do not worry, the experience will end with a delicious truffle tasting, that will dissolve any doubt! Time for lunch/shopping.

In the afternoon we’ll lead to Montefalco, known as the Balcony of Umbria (Ringhiera dell’Umbria) from which you can enjoy a breathtaking 360 ° view of the entire Valle Umbra. We’ll visit the old town and a local winery to enjoy the famous “Rosso Montefalco” and “Sagrantino”, the pride of the local agriculture.

Day 4: COOKING CLASS, LET’S MAKE PASTA! with LUNCH, AND ASSISI GUIDED TOUR

Nothing makes us so famous in the world such as pasta! And nothing can make us feel like home while we are far away as a forkful of this dish, so simple and yet so tasty! But do we really know its secrets and regional specialties? In a lovely farmhouse among the olive trees, we will learn the biological phases of the product from the grain to the grind, learn to recognize the various types of flour, the flour processing techniques, the seasons and their crops, and experience the flour processing into typical Umbrian pasta. At the end of the class, we’ll enjoy a delicious plate of pasta and some local delicacies!
After lunch, we’ll visit Assisi, the old town and the Franciscan places: Basilica di San Francesco, Chiesa di Santa Chiara, Piazza del Comune, Cattedrale di San Rufino, Chiesa di San Damiano. Time for shopping.

Day 5: VINEYARD TOUR BY HORSE & CARRIAGE with FOOD&WINE TASTING, AND SPELLO GUIDED TOUR

Travel deep into the vines through spectacular Assisi Valley in a carriage pulled by two magnificent horses. Experience a wine tour and tastings at a bio winery. Enjoy the relaxed pace while learning of the biological philosophy of the vineyards. A unique experience combining the charm of rural life of the past, with the modern bio consciousness based on the production of the highest quality food in full respect of the local natural resources. At the end, a delicious tasting of biological wines and cold cuts.

We’ll then lead to Spello, or with the words of Julius Caesar the "Splendidissima Colonia Julia", an enchanting village of Roman origin, listed among the most beautiful villages in Italy, thanks to its rich environmental, cultural and artistic heritage. Among its places of interest: Torri di Properzio, Chiesa di Santa Maria Maggiore and Cappella Baglioni with majolica floor of Deruta and frescoes by Pinturicchio. Time for lunch/shopping.

Day 6: COOKING CLASS “TORTA AL TESTO” with FOOD&WINE TASTING and SPOLETO GUIDED TOUR

The "torta al testo" is an ancient bread, not leavened, which owes its name to the cast iron dish, the “testo”, on which the dough was cooked. Few gestures of expert and loving hands, and we’ll find ourselves in a world of genuine flavours and aromas, in the very heart of the Umbrian culinary tradition. A simple recipe and yet so precious that will treat your palate! At the end of a class, a delicious tasting of “torta al testo” stuffed with all the best of local norcineria, with a glass of fine wine.

We’ll then reach Spoleto, the ancient capital of the Lombard dukes. Spoleto is often considered one of Umbria’s most graceful hill towns. Spoleto will leave you breathless thanks to many Roman and medieval attractions that will make an unforgettable impression. Time for shopping.

Day 7: WINE TOUR with FOOD & WINE TASTING AND ORVIETO GUIDED TOUR

You cannot visit Umbria without enjoying its food and wine delights. The viticulture of our region has its origins at the time of the Etruscans and the ancient people of the Umbrians, who exploited the excellent predisposition of the soil to agriculture, and the advantageous climatic conditions to grape vine cultivation. To date, Umbria has about 13,000 hectares of vineyards, where the quality of production, rich in very prestigious autochthonous varieties, and environmental sustainability, are the cornerstones of its competitiveness. Also the gastronomy of the region offers lots of delicacies certified as DOC and DOP by quality level. The excursion will take you to the deepest secrets of our cuisine. You’ll visit a renowned winery and taste some local specialties…buon appetito!
